Ingredients
  

Broth
  • 4 cups vegetable broth
  • 2 tbsp white miso paste
  • 2 tbsp tahini or sesame paste
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp rice vinegar
  • 0.5 tsp chili flakes optional
Noodles and Toppings
  • 2 packs ramen noodles seasoning discarded
  • 2 cups mushrooms sliced
  • 1 tbsp olive oil
  • 2 soft-boiled eggs
  • 2 green onions sliced
  • 1 tbsp sesame seeds

Method
 

  1. Cook mushrooms in olive oil until golden and crispy.
  2. Sauté garlic and ginger in sesame oil.
  3. Add broth, miso paste, tahini, soy sauce, vinegar, and chili flakes.
  4. Whisk until broth becomes creamy.
  5. Simmer 5–7 minutes.
  6. Add ramen noodles and cook until tender.
  7. Divide ramen into bowls.
  8. Top with crispy mushrooms, eggs, scallions, and sesame seeds.
  9. Serve immediately.
