Ingredients
  

Meatballs
  • 1 can chickpeas or lentils
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan or vegan
  • 1 egg or flax egg
  • 2 cloves garlic
  • 1/4 cup onion chopped
  • 2 tbsp parsley
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • salt and pepper
  • 1-2 tbsp olive oil

Equipment

  • Mixing bowls

Method
 

  1. Pulse chickpeas until slightly chunky.
  2. Mix with remaining ingredients.
  3. Form into balls.
  4. Cook in skillet until golden.
  5. Simmer in sauce and serve.

Notes

Chill before cooking for better texture. Freeze for up to 3 months.
