Ingredients
  

Filling
  • 3 cups apples peeled and diced
  • 2 tbsp butter
  • 0.33 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
Assembly
  • 12 egg roll wrappers
  • 1 egg beaten
  • oil for frying

Method
 

  1. Cook apples with butter, sugar, spices, and lemon juice until softened.
  2. Add cornstarch slurry and cook until thickened, then cool.
  3. Place filling on wrappers, roll tightly, and seal with egg.
  4. Heat oil to 350°F and fry egg rolls until golden brown.
  5. Drain on paper towels and serve warm.
