Ingredients
  

Roux
  • 0.5 cup vegetable oil
  • 0.5 cup flour
Gumbo
  • 12 oz andouille sausage
  • 1 lb chicken thighs
  • 1 lb shrimp
  • 1 onion
  • 1 stalk celery
  • 1 bell pepper
  • 3 cloves garlic
  • 6 cups chicken broth
  • 1 tsp Cajun seasoning
  • 0.5 tsp thyme
  • 2 bay leaves
  • 2 cups cooked rice

Method
 

  1. Make dark roux by cooking oil and flour until deep brown.
  2. Add sausage and chicken; cook.
  3. Add vegetables and cook.
  4. Add broth and simmer 30–40 minutes.
  5. Add shrimp and cook 5 minutes.

Dark roux is essential for authentic flavor.
