Pork Filling
  • 2 lbs pork shoulder
  • 4 guajillo chiles dried
  • 3 ancho chiles dried
  • 2 cloves garlic
  • 0.5 onion

Method
 

  1. Cook pork until tender and shred.
  2. Blend soaked chiles into sauce.
  3. Mix pork with sauce.
  4. Prepare masa dough.
  5. Assemble tamales and steam.

Notes

Steam until masa separates easily from husk.
