Ingredients
  

Sweet Potato Fries
  • 2 sweet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • salt and pepper
Salad
  • 1 bunch kale chopped
  • 1/4 cup Parmesan optional
  • 1 cup chickpeas
Dressing
  • 1 avocado
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic
  • 2-3 tbsp water

Equipment

  • Baking sheet
  • Mixing bowls
  • Blender or food processor
  • Knife

Method
 

  1. Roast sweet potato fries at 425°F for 25–30 minutes.
  2. Blend dressing ingredients until smooth.
  3. Massage kale with dressing.
  4. Add chickpeas and Parmesan.
  5. Serve with fries and garnish.

Notes

Massage kale well for best texture. Serve fries fresh for crispiness.
