Ingredients
  

Chicken
  • 8 chicken drumsticks skin-on
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder optional
  • 1 tsp oregano
  • 1 tsp baking powder for crispiness

Method
 

  1. Preheat oven to 425°F (220°C). Line baking sheet with foil and place wire rack on top.
  2. Pat chicken drumsticks dry thoroughly with paper towels.
  3. Mix all spices and baking powder in a bowl.
  4. Coat chicken with olive oil, then rub seasoning evenly over all pieces.
  5. Arrange chicken on wire rack with space between pieces.
  6. Bake for 35–45 minutes, flipping halfway through, until crispy and cooked through.
  7. Rest for 5 minutes before serving.

Notes

For extra crispiness, broil for 2–3 minutes at the end.
