Method
- Preheat oven to 425°F (220°C). Line baking sheet with foil and place wire rack on top.
- Pat chicken drumsticks dry thoroughly with paper towels.
- Mix all spices and baking powder in a bowl.
- Coat chicken with olive oil, then rub seasoning evenly over all pieces.
- Arrange chicken on wire rack with space between pieces.
- Bake for 35–45 minutes, flipping halfway through, until crispy and cooked through.
- Rest for 5 minutes before serving.
Notes
For extra crispiness, broil for 2–3 minutes at the end.
