Cookie Dough
  • 1 cup unsalted butter softened
  • 1.25 cups brown sugar
  • 0.25 cup granulated sugar
  • 2 eggs large
  • 1 tbsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon
  • 2 cups rolled oats
  • 1.5 cups pecans chopped
  • 0.5 cup caramel bits optional

Method
 

  1. Cream butter and sugars until light and fluffy.
  2. Add eggs and vanilla and mix well.
  3. Whisk together flour, baking soda, salt, and cinnamon.
  4. Mix dry ingredients into wet ingredients.
  5. Stir in oats, pecans, and caramel bits.
  6. Chill dough for 45 minutes.
  7. Scoop dough onto baking sheet.
  8. Bake at 350°F for 12–15 minutes.
  9. Cool on baking sheet then transfer to rack.

Notes

Chilling the dough helps create thick bakery-style cookies. Toast pecans for best flavor.
