Ingredients
  

Main
  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can kidney beans drained
  • 1 can corn drained
  • 1 can diced tomatoes with chilies
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 1 cup cheddar cheese shredded
Topping
  • 1 cup biscuit mix
  • 0.5 cup milk
  • 1 egg

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook ground beef until browned and drain fat.
  3. Add onion and garlic, cook until softened.
  4. Stir in beans, corn, tomatoes, and spices. Simmer briefly.
  5. Transfer to baking dish and top with cheese.
  6. Mix biscuit topping ingredients and pour over.
  7. Bake 25–30 minutes until golden.
