Filling
  • 2 cups rotisserie chicken shredded
  • 1 cup rice cooked
  • 1 cup cheese shredded
  • 0.5 cup black beans
  • 0.5 cup corn
  • 0.5 cup salsa
  • 0.25 cup sour cream
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • salt
  • black pepper
Assembly
  • 4 flour tortillas
  • 1 tbsp olive oil or butter

Method
 

  1. Combine chicken, rice, beans, corn, salsa, sour cream, and spices in a bowl.
  2. Warm tortillas and fill with mixture and cheese.
