Chicken and Stuffing Casserole

Ingredients
  

  • 3 cups cooked chicken shredded or cubed
  • 1 can cream of chicken soup 10.5 oz
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1 onion diced
  • 2 stalks celery diced
  • 1 cup frozen mixed vegetables optional
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • to taste salt and pepper
  • 1 package prepared stuffing mix 6 oz
  • 1/4 cup unsalted butter melted
  • 1/2 cup shredded cheddar cheese optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix cream of chicken soup, milk, sour cream, garlic powder, thyme, salt, and pepper.
  3. Stir in chicken, onion, celery, and mixed vegetables until combined. Pour into baking dish.
  4. Combine stuffing mix and melted butter. Sprinkle evenly over casserole. Top with cheese if using.
  5. Bake 25–30 minutes until casserole is hot and topping is golden.
  6. Allow to cool 5 minutes before serving.

Notes

For a shortcut, use rotisserie chicken. Broil 2–3 minutes for an extra crisp topping.
