Chicken Pozole Verde

A traditional Mexican green pozole made with tender chicken, hominy, and a fresh tomatillo green sauce.

Ingredients
  

Pozole
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 lb chicken breast or thighs
  • 1 can hominy drained and rinsed
  • 4 cups chicken broth
  • 1 tsp cumin
  • 0.5 tsp oregano
  • salt to taste
  • black pepper to taste
Green Sauce
  • 1 lb tomatillos husked
  • 2 green chilies
  • 0.5 onion
  • 2 cloves garlic
  • 1 cup cilantro
  • 0.5 cup water
  • 1 lime juiced

Equipment

  • Large pot
  • Blender
  • Knife
  • Cutting board

Method
 

  1. Boil tomatillos and green chilies until softened, then blend with onion, garlic, cilantro, lime juice, and water.
  2. Sauté onion and garlic in oil in a large pot.
  3. Add green sauce and cook for 5 minutes.
  4. Add chicken, broth, hominy, and spices.
  5. Simmer until chicken is cooked, then shred and return to pot.
  6. Simmer 10 more minutes, then serve with toppings.

Notes

Pozole tastes even better the next day. Serve with cabbage, radishes, onion, cilantro, and lime.
