- Boil tomatillos and green chilies until softened, then blend with onion, garlic, cilantro, lime juice, and water.
- Sauté onion and garlic in oil in a large pot.
- Add green sauce and cook for 5 minutes.
- Add chicken, broth, hominy, and spices.
- Simmer until chicken is cooked, then shred and return to pot.
- Simmer 10 more minutes, then serve with toppings.
Notes
Pozole tastes even better the next day. Serve with cabbage, radishes, onion, cilantro, and lime.
