Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
Wet Ingredients
  • 2 eggs large
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 3/4 cup milk any type
  • 1 cup fresh spinach blended into puree
Add-ins
  • 3/4 cup chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Blend spinach with milk until smooth to create a puree.
  3. Whisk together dry ingredients in a large bowl.
  4. Mix eggs, oil, vanilla, and spinach puree in a separate bowl.
  5. Combine wet and dry ingredients gently until just mixed.
  6. Fold in chocolate chips evenly.
  7. Fill muffin cups 3/4 full and bake for 18–22 minutes.
  8. Cool on wire rack before serving or storing.

Notes

Do not overmix batter. Spinach must be fully blended for best texture and hidden flavor.
