Ingredients
  

Curry
  • 1 lb white fish cut into chunks
  • 1 tbsp oil
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp curry paste
  • 1 can coconut milk
  • 0.5 cup broth
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 lime juice
  • 1 lime zest
Serving
  • 2 cups jasmine rice

Equipment

  • Large pan

Method
 

  1. Cook onion, garlic, and ginger.
  2. Add curry paste and cook briefly.
  3. Add coconut milk and broth and simmer.
  4. Add fish and cook 6–8 minutes.
  5. Finish with lime juice and serve over rice.

Notes

Use firm fish and avoid overcooking for best texture.
