Ingredients
  

Salsa
  • 1 cup corn kernels fresh or thawed frozen
  • 1 avocado diced
  • 0.5 red bell pepper diced
  • 0.25 red onion finely chopped
  • 1 jalapeño minced, optional
  • 1 lime juice
  • 2 tbsp cilantro chopped
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp olive oil optional

Method
 

  1. Combine corn, avocado, bell pepper, onion, and jalapeño in a bowl.
  2. Add lime juice, olive oil, cilantro, salt, and pepper.
  3. Gently toss to combine without mashing avocado.
  4. Serve immediately or chill for 15–30 minutes for flavors to meld.

Notes

Add avocado just before serving to prevent browning.
