Ingredients
  

Soup Base
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks chopped
  • 1 potato peeled and diced
  • 4 cups vegetable broth
  • 1 cup cream
  • 0.5 tsp thyme
  • 0.5 tsp oregano
  • salt and pepper to taste

Equipment

  • Large pot
  • Knife
  • Cutting board
  • Immersion blender

Method
 

  1. Sauté onion in butter and oil until soft.
  2. Add garlic and cook briefly.
  3. Add vegetables and cook for a few minutes.
  4. Add broth and simmer until tender.
  5. Blend until smooth.
  6. Stir in cream and season to taste.

Notes

Adjust consistency with broth or milk as needed.
