- Slice cucumbers thinly and lightly salt them. Let sit for 5–10 minutes.
- Prepare dressing by whisking yogurt, soy sauce, vinegar, sesame oil, garlic, honey, and chili flakes.
- Drain excess moisture from cucumbers.
- Combine cucumbers with dressing and mix well.
- Top with sesame seeds and green onions.
- Serve immediately or chill before serving.
