Ingredients
  

Salad
  • 4 cups cucumbers thinly sliced
  • 0.5 cup Greek yogurt or mayonnaise
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 garlic clove minced
  • 1 tsp honey
  • 0.5 tsp chili flakes
  • 1 tbsp sesame seeds
  • 2 tbsp green onions chopped

Method
 

  1. Slice cucumbers thinly and lightly salt them. Let sit for 5–10 minutes.
  2. Prepare dressing by whisking yogurt, soy sauce, vinegar, sesame oil, garlic, honey, and chili flakes.
  3. Drain excess moisture from cucumbers.
  4. Combine cucumbers with dressing and mix well.
  5. Top with sesame seeds and green onions.
  6. Serve immediately or chill before serving.

Notes

Best served fresh. Adjust spice and sweetness to taste.
