Soup Base
  • 6 potatoes peeled and diced
  • 6 slices bacon chopped
  • 2 cups green cabbage shredded
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 cups broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp thyme
  • salt and pepper to taste

Method
 

  1. Cook bacon until crispy and set aside.
  2. Sauté onion in butter and bacon fat until soft.
  3. Add garlic and cook briefly.
  4. Add potatoes and broth, simmer until tender.
  5. Add cabbage and cook until soft.
  6. Blend partially for texture.
  7. Stir in cream and bacon, season to taste.
  8. Simmer briefly and serve hot.

For best flavor, use fresh herbs and high-quality bacon. Adjust thickness with broth or cream.
