  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 leeks sliced
  • 2 cloves garlic minced
  • 4 potatoes peeled and diced
  • 4 cups broth
  • 1 cup heavy cream
  • salt and pepper to taste

Method
 

  1. Melt butter and olive oil in a large pot over medium heat.
  2. Add leeks and cook until soft and fragrant.
  3. Stir in garlic and cook briefly.
  4. Add potatoes and broth, then simmer until potatoes are tender.
  5. Blend soup until smooth.
  6. Stir in cream and season to taste.
  7. Serve warm with garnish.
