  • 12 oz pasta fettuccine or penne
  • 1 cup pumpkin puree
  • 0.5 cup heavy cream
  • 0.25 cup Parmesan cheese
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp fresh sage
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook pasta until al dente.
  2. Sauté garlic in olive oil for 1 minute.
  3. Add pumpkin puree, cream, salt, pepper, and optional spices. Heat for 3-4 minutes.
  4. Add pasta and toss to coat.
  5. Stir in Parmesan and fresh sage.
  6. Serve immediately with extra Parmesan.
