Ingredients
  

Pasta
  • 12 oz pasta penne or rigatoni
  • 3 cups butternut squash peeled and cubed
  • 1 head garlic
  • 2 tbsp olive oil
  • 1 small onion chopped
  • 1 cup vegetable broth
  • 0.5 cup heavy cream or half-and-half
  • 0.5 cup parmesan cheese grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili flakes optional
  • 1 tbsp fresh sage or parsley for garnish

Method
 

  1. Roast butternut squash and garlic at 400°F for 25–30 minutes.
  2. Cook pasta until al dente.
  3. Sauté onion until soft.
  4. Blend roasted squash, garlic, onion, broth, and cream.
  5. Heat sauce in skillet.
  6. Stir in parmesan cheese.
  7. Add pasta and toss to coat.
  8. Adjust seasoning and garnish with herbs.
