Ingredients
  

Soup
  • 2 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 4 cups green peas fresh or frozen
  • 3 cups vegetable broth
  • 0.5 cup heavy cream or coconut milk
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh mint or chives chopped

Equipment

  • Large pot
  • Immersion blender or blender
  • Knife and cutting board

Method
 

  1. Heat olive oil in a pot and sauté onion until softened.
  2. Add garlic and cook briefly.
  3. Add peas and vegetable broth.
  4. Simmer for 8–10 minutes.
  5. Blend soup until smooth.
  6. Stir in cream or coconut milk.
  7. Season with salt, pepper, and herbs.
  8. Serve warm with optional toppings.

Notes

Add a squeeze of lemon juice for extra brightness.
