- Preheat oven to 425°F (220°C).
- Cut potatoes into wedges.
- Soak potatoes in cold water for 20–30 minutes.
- Dry potatoes very well.
- Toss with cornstarch, seasoning, and oil.
- Place on baking sheet in single layer.
- Bake 35–40 minutes, flipping halfway.
- Serve hot with dipping sauce.
Notes
Soaking and drying the potatoes is the key to making crispy wedges. Cornstarch helps create a crispy coating.
