Ingredients
  

Salad
  • 2 cups strawberries sliced
  • 2 cups cucumber thinly sliced
  • 2 tbsp red onion thinly sliced
  • 2 tbsp fresh mint or basil chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar
  • salt and black pepper to taste

Method
 

  1. Slice strawberries and cucumbers.
  2. Slice red onion and chop herbs.
  3. Combine strawberries, cucumbers, and onion in a bowl.
  4. Whisk olive oil, lemon juice, salt, and pepper.
  5. Toss salad with dressing and top with herbs.
  6. Chill before serving.

Notes

Add dressing just before serving to keep cucumbers crisp.
