  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 1 cup fresh or frozen blueberries
  • Optional: nuts, cinnamon, extra honey

Method
 

  1. Preheat oven to 350°F and grease a small baking dish.
  2. In a mixing bowl, whisk eggs, cottage cheese, honey, and vanilla extract until smooth.
  3. Add rolled oats, baking powder, and salt. Stir to combine.
  4. Gently fold in blueberries.
  5. Pour mixture into the prepared baking dish and smooth the top.
  6. Bake 30–35 minutes until set and lightly golden.
  7. Allow to cool slightly, slice, and serve.

Notes

Use frozen blueberries if fresh are unavailable. Add nuts or cinnamon for extra flavor and texture.
