  • 2 large chicken breasts cut into cubes
  • 3 medium zucchinis sliced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup Parmesan cheese grated
  • 1 cup mozzarella cheese shredded
  • 1 small onion chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Slice zucchini and cut chicken into cubes.
  3. Mix chicken, zucchini, olive oil, garlic, onion, and seasonings in a bowl.
  4. Transfer mixture to a greased baking dish.
  5. Top with Parmesan and mozzarella cheese.
  6. Bake for 25–30 minutes until chicken is cooked and cheese is golden.
  7. Let rest for 5 minutes before serving.

Notes

You can add tomatoes, mushrooms, or spinach to this bake. For a low-carb version, serve as is. For a more filling meal, serve with rice or pasta.
