- Preheat oven to 400°F (200°C).
- Slice zucchini and cut chicken into cubes.
- Mix chicken, zucchini, olive oil, garlic, onion, and seasonings in a bowl.
- Transfer mixture to a greased baking dish.
- Top with Parmesan and mozzarella cheese.
- Bake for 25–30 minutes until chicken is cooked and cheese is golden.
- Let rest for 5 minutes before serving.
Notes
You can add tomatoes, mushrooms, or spinach to this bake. For a low-carb version, serve as is. For a more filling meal, serve with rice or pasta.
