Ingredients
  

Filling
  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 packet taco seasoning
  • 0.5 cup tomato sauce
  • 1 cup cooked rice
  • 1 cup cheddar cheese shredded
  • 0.5 cup black beans
  • 0.5 cup corn optional
Assembly
  • 4 large flour tortillas
  • 0.5 cup sour cream
  • 0.5 cup salsa

Method
 

  1. Heat oil in a skillet and cook onion until soft. Add garlic and cook briefly.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Stir in taco seasoning and tomato sauce. Simmer for 5 minutes.
  4. Add black beans and corn, cook for 2–3 minutes.
  5. Warm tortillas so they are soft and easy to fold.
  6. Fill tortillas with rice, beef mixture, cheese, sour cream, and salsa.
  7. Fold and roll into burritos.
  8. Optional: Toast burritos in a skillet until golden and crispy.

Notes

Do not overfill burritos. Wrap tightly and toast for best texture. Burritos can be frozen for later.
