- Heat oil in a skillet and cook onion until soft. Add garlic and cook briefly.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning and tomato sauce. Simmer for 5 minutes.
- Add black beans and corn, cook for 2–3 minutes.
- Warm tortillas so they are soft and easy to fold.
- Fill tortillas with rice, beef mixture, cheese, sour cream, and salsa.
- Fold and roll into burritos.
- Optional: Toast burritos in a skillet until golden and crispy.
Notes
Do not overfill burritos. Wrap tightly and toast for best texture. Burritos can be frozen for later.
