Method
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter, then press into a pie dish.
- Bake crust for 8–10 minutes and let cool slightly.
- Whisk sweetened condensed milk and egg yolks until smooth.
- Add lime juice and zest and mix until thickened.
- Pour filling into crust and bake 12–15 minutes.
- Cool at room temperature, then refrigerate for at least 3 hours.
- Whip cream with powdered sugar and vanilla, then spread on chilled pie.
Notes
For best flavor, use fresh key lime juice. Pie must chill completely before slicing.
