Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup granulated sugar
  • 6 tbsp unsalted butter melted
Filling
  • 14 oz sweetened condensed milk
  • 4 egg yolks
  • 0.5 cup key lime juice
  • 1 tbsp lime zest
Topping
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter, then press into a pie dish.
  3. Bake crust for 8–10 minutes and let cool slightly.
  4. Whisk sweetened condensed milk and egg yolks until smooth.
  5. Add lime juice and zest and mix until thickened.
  6. Pour filling into crust and bake 12–15 minutes.
  7. Cool at room temperature, then refrigerate for at least 3 hours.
  8. Whip cream with powdered sugar and vanilla, then spread on chilled pie.

Notes

For best flavor, use fresh key lime juice. Pie must chill completely before slicing.
