Ingredients
  

Skillet Base
  • 1 medium head cauliflower riced
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup spinach
  • 1 tsp oregano
  • 0.5 tsp paprika
  • 0.33 cup olives sliced
  • 1 lemon juiced
  • 0.25 cup feta cheese optional
  • salt and pepper to taste

Method
 

  1. Sauté onion in olive oil.
  2. Add garlic and tomatoes.
  3. Cook cauliflower rice until tender.
  4. Add spinach, olives, and seasoning.
  5. Finish with lemon and feta.

Notes

Dry cauliflower well to avoid excess moisture in the skillet.
