Ingredients
  

Wrap Filling
  • 4 tortillas
  • 1 cup hummus
  • 1 cup lettuce
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 0.5 cup kalamata olives
  • 0.5 cup feta cheese
  • 1 red onion
Seasoning
  • 2 tbsp olive oil
  • 0.5 lemon juice
  • 1 tsp oregano
  • salt and pepper

Equipment

  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Slice and prepare all vegetables.
  2. Mix vegetables with olive oil, lemon juice, oregano, salt, and pepper.
  3. Warm tortillas slightly if desired.
  4. Spread hummus evenly over each tortilla.
  5. Add vegetable mixture and feta cheese.
  6. Top with lettuce.
  7. Wrap tightly and slice in half.
  8. Serve immediately or store wrapped.

Notes

Add grilled protein or keep vegan by skipping feta. Best assembled fresh.
