Method
- Slice and prepare all vegetables.
- Mix vegetables with olive oil, lemon juice, oregano, salt, and pepper.
- Warm tortillas slightly if desired.
- Spread hummus evenly over each tortilla.
- Add vegetable mixture and feta cheese.
- Top with lettuce.
- Wrap tightly and slice in half.
- Serve immediately or store wrapped.
Notes
Add grilled protein or keep vegan by skipping feta. Best assembled fresh.
