Ingredients
  

Chicken
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 1 lime (juice)
Assembly
  • 4 bolillo rolls
  • 1 avocado
  • 1 tomato
  • 1 cup lettuce
  • 4 slices cheese
  • 0.5 cup refried beans
Chipotle Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp chipotle peppers
  • 1 tsp lime juice

Equipment

  • Mixing bowls
  • Skillet or grill pan
  • Knife

Method
 

  1. Mix olive oil, spices, and lime juice in a bowl.
  2. Coat chicken with marinade and let sit for 15–20 minutes.
  3. Cook chicken in a skillet or grill for 5–6 minutes per side.
  4. Let chicken rest, then slice thinly.
  5. Mix mayonnaise, chipotle, and lime juice to make sauce.
  6. Toast sandwich rolls lightly.
  7. Spread beans and sauce on bread.
  8. Add chicken, cheese, avocado, tomato, and lettuce.
  9. Close sandwich, slice, and serve immediately.

Notes

Adjust spice level with chipotle. Best served fresh.
