  • 4 potatoes peeled and diced
  • 1 cup grated cheese
  • 2 tbsp butter
  • 1 onion optional
  • salt to taste
  • black pepper to taste

Method
 

  1. Parboil diced potatoes until slightly tender.
  2. Sauté onion in butter until soft.
  3. Add potatoes and cook until slightly crispy.
  4. Add cheese and let it melt.
  5. Press into a pancake and cook until golden.
  6. Flip and cook other side until crispy.
