- Season lamb chops with salt, pepper, and rosemary.
- Heat olive oil and sear lamb chops 3–4 minutes per side.
- Remove lamb and add butter and garlic to pan.
- Add white wine and simmer until reduced.
- Return lamb chops to pan and spoon sauce over.
Notes
Cook lamb to medium-rare for best tenderness. Let rest before serving.
