Method
- Whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and pepper.
- Add chicken and coat well. Marinate for at least 30 minutes.
- Thread chicken and vegetables onto skewers.
- Grill on medium-high heat for 10–15 minutes, turning occasionally.
- Cook until chicken reaches internal temperature of 165°F.
- Rest for 5 minutes before serving.
Notes
Marinate longer for more flavor. Can be cooked in oven or grill pan.
