Ingredients
  

Chicken & Marinade
  • 4 boneless skinless chicken breasts
  • 2 California avocados, sliced
  • 2 tbsp olive oil
  • 1 juice of 1 lime
  • 1 lime zest
  • 2 cloves garlic, minced
  • 1 tsp chili flakes adjust to taste
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • salt and black pepper to taste
  • 2 tbsp fresh cilantro, chopped

Equipment

  • Grill or grill pan
  • Mixing bowls
  • Knife
  • Cutting board

Method
 

  1. Pat chicken dry. Mix olive oil, lime juice, lime zest, garlic, smoked paprika, cumin, chili flakes, salt, and pepper. Rub over chicken and marinate 15 min.
  2. Preheat grill or grill pan over medium-high heat. Lightly oil grates.
  3. Grill chicken 6–7 min per side until internal temp reaches 165°F (74°C). Let rest 5 min.
  4. Slice avocados and drizzle with lime juice to prevent browning.
  5. Slice chicken and arrange on plate. Top with avocado slices and sprinkle cilantro.
  6. Optional: serve with lime wedges and preferred sides.
  7. Serve immediately.

Notes

Can prepare chicken up to 2 hours ahead for extra flavor. Serve with roasted vegetables or salad for complete meal.
