  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1.5 cups enchilada sauce
  • 4 small tortillas cut into strips
  • 1 cup shredded cheese
  • 0.5 cup black beans optional
  • 0.5 cup corn optional

Method
 

  1. Heat oil in skillet and cook onion and garlic.
  2. Add ground beef and cook until browned.
  3. Add spices and enchilada sauce.
  4. Add beans, corn, and tortilla strips.
  5. Top with cheese, cover, and cook until melted.
  6. Garnish and serve.

Notes

You can add rice, vegetables, or make it spicy with jalapeƱos. Great for meal prep and freezer-friendly.
