Zucchini Boats
  • 4 zucchini halved
  • 1 tbsp olive oil
  • salt and pepper to taste
Filling
  • 1 lb ground beef
  • 0.5 onion chopped
  • 2 cloves garlic minced
  • 1 cup marinara sauce
  • 0.5 tsp Italian seasoning
Topping
  • 1 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Prepare zucchini by scooping out centers.
  3. Cook ground beef with onion and garlic.
  4. Add marinara and seasoning, simmer.
  5. Fill zucchini with beef mixture.
  6. Top with cheese and bake 20–25 minutes.

Notes

Pre-bake zucchini for softer texture if desired.
