Homemade Doner Kebab

Viral oven-baked doner kebab made with ground meat, yogurt, onion, and spices, then sliced and pan-fried for crispy edges.

Ingredients
  

  • 1 lb Ground beef or chicken
  • 1 small Onion grated
  • 2 cloves Garlic minced
  • 3 tbsp Plain yogurt
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 0.5 tsp Oregano
  • 0.5 tsp Chili flakes optional
  • Pita bread for serving
  • Lettuce for serving
  • Tomatoes for serving
  • Onion slices for serving

Equipment

  • Mixing bowl
  • Baking sheet
  • Parchment paper
  • Aluminum foil
  • Knife
  • Frying pan

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix ground meat, grated onion, garlic, yogurt, olive oil, and spices.
  3. Mix very well until the mixture becomes smooth and sticky.
  4. Shape meat into a thick log on parchment paper.
  5. Wrap tightly in parchment paper, then wrap again in foil.
  6. Place on baking sheet and bake for 50–60 minutes.
  7. Remove from oven and let cool, then refrigerate for 1–2 hours.
  8. Slice meat into thin slices.
  9. Pan fry slices in a little oil until edges are crispy.
  10. Serve in pita bread with vegetables and sauce.

Notes

Chilling the meat before slicing is very important so you can slice it thin like real doner. Pan frying after slicing gives crispy edges.
