Ingredients
  

Chocolate Layer
  • 1.5 cups dairy-free dark chocolate chips
  • 1 tbsp coconut oil
Peanut Butter Filling
  • 1 cup natural peanut butter smooth
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup or sugar-free syrup
  • 1 tsp vanilla extract
  • 1 pinch sea salt optional topping

Equipment

  • Mixing bowls
  • Mini muffin tin or silicone molds
  • Microwave or double boiler
  • Spoon or spatula

Method
 

  1. Line a mini muffin tin with paper liners.
  2. Melt chocolate chips with 1 tablespoon coconut oil until smooth.
  3. Add a spoonful of melted chocolate to each liner and spread to cover the base.
  4. Freeze for 10 minutes until chocolate hardens.
  5. Mix peanut butter, coconut oil, maple syrup, and vanilla until smooth.
  6. Add peanut butter mixture on top of the chocolate layer.
  7. Cover with remaining melted chocolate.
  8. Sprinkle sea salt if desired.
  9. Chill in refrigerator or freezer until fully set.
  10. Remove from liners and serve.

Notes

Store in the refrigerator for best texture or freeze for longer storage.
