Ingredients
  

Soup
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups chicken broth
  • 1 cup cooked shredded chicken
  • 0.5 cup small pasta or rice
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped
  • grated parmesan cheese for serving

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Add shredded chicken, oregano, basil, salt, and pepper.
  6. Add pasta or rice and simmer until tender.
  7. Stir in fresh parsley.
  8. Serve hot with grated parmesan cheese.

Notes

Add a squeeze of lemon juice for extra brightness and flavor.
