Ingredients
  

Salad
  • 2 cups brown rice cooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup olives sliced
  • 0.5 cup mozzarella cubed
  • 0.25 cup red onion chopped
  • 0.25 cup basil chopped
  • 2 tbsp parsley chopped
Dressing
  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp lemon juice
  • 1 tsp Italian seasoning

Method
 

  1. Cook brown rice and let it cool.
  2. Chop all vegetables and herbs.
  3. Whisk dressing ingredients together.
  4. Combine rice and all ingredients in a bowl.
  5. Mix well, chill, and serve.
