Ingredients
  

Soup
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 2 cups cooked turkey shredded
  • 6 cups turkey or chicken broth
  • 1 cup potatoes diced
  • 0.5 cup rice or pasta
  • 1 tsp thyme
  • 0.5 tsp oregano
  • 1 bay leaf

Equipment

  • Large pot
  • Knife
  • Cutting board
  • Wooden spoon

Method
 

  1. Sauté onion, carrots, and celery in olive oil until softened.
  2. Add garlic and cook briefly.
  3. Add broth, potatoes, rice, and seasonings, then simmer.
  4. Add cooked turkey and simmer until heated through.
  5. Remove bay leaf, add parsley and lemon juice, then serve.

Notes

You can use noodles, rice, or barley. Add lemon juice at the end to brighten flavor.
