Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 0.75 cup sugar
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 0.5 cup butter melted
  • 2 eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
Cream Cheese Filling
  • 8 oz cream cheese softened
  • 0.25 cup sugar
  • 1 tsp vanilla extract

Equipment

  • Mixing bowls
  • Muffin tin

Method
 

  1. Preheat oven to 375°F and line muffin tin.
  2. Beat cream cheese filling ingredients.
  3. Mix dry ingredients.
  4. Mix wet ingredients.
  5. Combine wet and dry mixtures.
  6. Layer batter and cream cheese in muffin liners.
  7. Bake 18–22 minutes.
  8. Cool before serving.

Notes

Do not overmix batter for soft muffins.
