Ingredients
  

Muffins
  • 2 cups all-purpose flour
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter melted
  • 0.25 cup vegetable oil
  • 0.75 cup granulated sugar
  • 2 eggs
  • 0.75 cup plain yogurt or sour cream
  • 0.25 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
Glaze
  • 1 cup powdered sugar
  • 2-3 tbsp lemon juice

Method
 

  1. Preheat oven and line muffin tin with liners.
  2. Whisk dry ingredients together.
  3. Mix wet ingredients together.
  4. Combine wet and dry ingredients gently.
  5. Fill muffin liners and bake.
  6. Cool and drizzle with glaze.

Notes

Rub lemon zest into sugar before mixing for stronger lemon flavor.
