Ingredients
  

Meatballs
  • 500 g ground beef or lamb
  • 2 cloves garlic minced
  • 1 onion finely grated
  • 0.25 cup parsley chopped
  • 0.25 cup breadcrumbs
  • 1 egg
  • 1 tsp oregano
  • 0.5 tsp cumin
  • salt and pepper to taste
  • 1 tbsp olive oil for cooking
Orzo
  • 1 cup orzo pasta
  • 2 cups broth
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon zest and juice
  • 0.25 cup Parmesan cheese grated
  • 0.25 cup parsley chopped

Equipment

  • Mixing bowls

Method
 

  1. Mix all meatball ingredients in a bowl until just combined.
  2. Shape into small meatballs.
  3. Cook meatballs in olive oil until browned and cooked through, then set aside.
  4. Sauté garlic in the same pan.
  5. Add orzo and toast briefly.
  6. Pour in broth and simmer until orzo is tender.
  7. Stir in lemon zest, juice, Parmesan, and parsley.
  8. Return meatballs to pan and warm through before serving.
