- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk together flour, baking soda, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Add egg, lime juice, lime zest, and vanilla extract; mix well.
- Gradually combine dry ingredients with wet ingredients.
- Roll dough into balls and coat with lime sugar if desired.
- Bake for 10–12 minutes until edges are set.
- Cool on wire rack before serving.
Notes
For extra flavor, add a lime glaze on top after baking.
