Ingredients
  

Crispy Potatoes
  • 3 medium potatoes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Taco Meat
  • 0.5 lb ground beef or chicken
  • 1 tbsp taco seasoning
  • 0.25 cup water
Toppings
  • 0.5 cup shredded cheese
  • 1 cup shredded lettuce
  • 0.5 cup diced tomatoes
  • 1 avocado
  • 0.25 cup sour cream or Greek yogurt
  • salsa
  • lime wedges
  • cilantro

Method
 

  1. Preheat oven to 425°F and prepare baking sheet.
  2. Season and roast potatoes for 25–30 minutes until crispy.
  3. Cook ground meat in a skillet until browned.
  4. Add taco seasoning and water and simmer.
  5. Assemble bowls with potatoes, meat, and toppings.

Notes

You can swap regular potatoes for sweet potatoes. Greek yogurt is a high-protein substitute for sour cream.
