Ingredients
  

Filling
  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup black beans
  • 1 cup corn
  • 2 cups shredded cheese
  • 2 cups enchilada sauce
  • 1 tsp chili powder
  • 1 tsp cumin

Method
 

  1. Cook onion, garlic, and ground beef until browned.
  2. Add spices, beans, and corn.
  3. Layer tortillas, meat, sauce, and cheese in baking dish.
  4. Bake covered 20 minutes, then uncovered 10–15 minutes.
  5. Rest, slice, and serve.

Notes

Let rest before slicing for best structure.
