Ingredients
  

Tofu
  • 14 oz tofu
  • 2 tbsp cornstarch
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
Broth
  • 4 cups vegetable broth
  • 2 tbsp miso paste
  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tsp maple syrup
Noodles
  • 8 oz ramen noodles

Method
 

  1. Coat and cook tofu until crispy.
  2. Cook noodles separately.
  3. Prepare broth with miso and peanut butter.
  4. Assemble noodles and broth.
  5. Top with tofu and serve.

Customize toppings and spice level. Add more broth for a lighter consistency.
