Mom’s Authentic Puerto Rican Rice and Beans

Ingredients
  

Rice and Beans
  • 2 cups long grain white rice
  • 1 can red beans 15 oz, drained
  • 2 tbsp olive oil
  • 0.5 cup sofrito
  • 3 cloves garlic minced
  • 0.5 onion diced
  • 0.5 cup tomato sauce
  • 1 packet sazón seasoning
  • 0.5 tsp oregano
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 3 cups chicken broth
  • 1 tbsp fresh cilantro optional

Equipment

  • Large pot or Dutch oven
  • Wooden spoon
  • Measuring cups
  • Knife and cutting board

Method
 

  1. Rinse rice under cold water until water runs clear.
  2. Heat olive oil in a large pot over medium heat.
  3. Cook onion until softened then add garlic.
  4. Stir in sofrito and cook for 2 minutes.
  5. Add tomato sauce, sazón, oregano, cumin, salt, and pepper.
  6. Add beans and stir well.
  7. Add rice and chicken broth and bring to a boil.
  8. Reduce heat to low, cover, and cook 18–20 minutes.
  9. Fluff rice with a fork and garnish with cilantro before serving.

Notes

Add diced ham or pork for additional traditional flavor.
